I think one would need a database dump or toolserver access to
determine that. I would suggest that the devs add more details (such
as this) to the Special:Statistics page but I'm afraid that would make
*some people* panic and wantonly delete redirects for no meaningful
reason.

As for the actual number, I'm willing to make an unscientific guess of
half a million, maybe more. Not that there's anything wrong with that.
