The next best thing is to alphabetize the name "Foo:Test" as "Test" on
the category page.  In the article Foo:Test, instead of doing:

[[Category:MyCategory]]

Do this:

[[Category:MyCategory|Test]]

Now when you view the category page for MyCategory, Foo:Test will be
alphabetized under "T" instead of "F".
