I just did that. I backed up (Linux, using tar) my MediaWiki
directory. I backed up the database. Then I ftp'd the directory
structure to the new server and untarred it. Then I imported the
database into the database on the new server.
If you have images, execute the maintenance/importImages.php script
from the command line.
It worked like a dream!
