Yes. This is what I was thinking... I was wondering if something like
this already exists or not.
It would probably require the user to select which pages s/he would
want available offline and some plugins (like texvc which require
specific tools) would probably not work properly.
The main advantage (for me at least) would be the possibility of
creating/editing pages when an Internet connection is not available
and perform the submits whenever I reconnect to the net.

I guess he's asking for something like svn but with wiki :
you've a local copy (using checkout/update), you modify it locally
and then you commit your modifications to the repository where they
are merged with other people modifications (and it asks what to do
in case of conflicting edits)
no idea of such a tool but it would be interesting if you have a
limited access time to the Internet
