Ok, now we have a testable problem: a test case (editing a particular
page title: "Têst" or "Tést2") and a diagnostic symptom which is

The next thing you need to do is:
* Make a complete and exact backup of all your wiki files for
examination. I recommend doing this periodically, so you can work from a
known state.
* List any and all changes you have made from the original source code,
and restore every file to its original state. (use 'diff -ur' if
possible to make a complete change set)
* List any and all changes you have made from the default generated
configuration file, and restore every change to its original state. (You
can do a fresh installation for comparison.)
You should provide the contents of your LocalSettings.php for
double-checking.

Since you said it stopped working when you changed something, I would
recommend restoring all files to their original state and testing it
from there.
Among others things you should check to confirm that you have not
attempted to engage Latin-1 mode; this is no longer available in
MediaWiki 1.5 (we support Unicode UTF-8 only).
