you are always welcome - as is anyone - to use material from Wikiversity in courses in your university. Wikiversity is part of the Wikimedia Foundation, which releases all of its material under free licences. The one we use is the Gnu Free Documentation Licence (GFDL), details of which can be found at http://en.wikiversity.org/wiki/Wikiversity:GNU_Free_Documentation_License.
However, I cannot find material on the topic you requested - http://en.wikiversity.org/wiki/Topiary does not exist yet. Wikiversity works by allowing anyone to add their own materials, or to edit or discuss others' materials - so I would therefore welcome you or any of your students to develop this page (by clicking the "edit" button, adding your text, and saving it). This goes for any page which you feel would be a good space in which to facilitate your students' learning - you are always welcome to participate.
I am sorry we can't be of any more help to you in providing material in the short term. You may, however, want to try our sister project, Wikipedia, where there is a page on the subject: http://en.wikipedia.org/wiki/Topiary. You are free to use and/or edit that page in exactly the same way as I've outlined above.
