If you entered your email to be contacted via the wikipedia interface, that email won't show on your user preferences page. Is that a security feature, or Alzheimer's on our part? ;-)

I believe this is a browser bug. Are you using Mozilla or close kin, and did you tell it to save your username and password for the login form?
It seems to recognize the change password fields and e-mail fields in the preferences box as 'the same' as the login form, and helpfully fills in the e-mail field with the same value you did before -- probably empty.
Workaround: tell it not to save your info. (But that's annoying!)
Haven't tried yet, but might also work: clear the saved form, then when you login again fill the e-mail field. It ought to keep the value around on the preferences.
We may want to tweak the form to make it look different to browsers that pull tricks like this. Blech.
