If you are including these metrics in a report for a recently completed grant, I would recommend using namespace 0, because that is what is recommended in the Calculating Global Metrics learning pattern: https://meta.wikimedia.org/wiki/Grants:Learning_patterns/Number_of_articles_created_or_improved_in_Wikimedia_projects .  It will count the number of pages that have been completely proofread and validated and pushed to mainspace for general consumption.

If it is not for a grant and you want to count number of proofreadings, then that is different than the number of pages created in the proofreading namespace (250).  I'm not sure how to calculate this yet, let me check with a Wikisource developer and get back to the list on this.
