I'm Lodewijk (from chapcom and Wikimedia NL) and just reading this list out of interest.

Perhaps you find more interesting material on Wikibooks as well - they contain material that is well suited for offline usage often.

thanks Abbas for digging deep into this. I have explored the site http://en.wikiversity.org and it seems so relevant and informative to universities. That can be good idea. I don't know whether there is an archive for the site, but if there isn't I can still download the entire site using HTTRACK, but we have to see what the take of others in this is. If you give me a go ahead, I can have wikiversity offline by the end of tomorrow. I am waiting to hear from you guys.

I've just received intel from a fourth-year medical student at University of Nairobi regarding Wikiversity. She just told me that Wikiversity has lots of stuff in relation to what their Medicine curriculum. So apart from gettng an offline Wikipedia, is it possible for us to get an offline version of Wikiversity too? Seems that it'll be of great help to university students.
