I have also not been able to find good direct flights from SFO to something close. The closest options I found was Munich. Usually, rome2rio will be able to give a good estimate on the options, and that confirms my own findings. I found it myself most convenient to fly (with a single stopover) to Krakow and train from there. 

Direct trains are probably your best bet. If trains have many services a day, I'm less worried about timeliness. 
Options I looked into: flying to Krakow (1h train, with many options a day), Katowice, Warsaw (few hour train) or Prague (5h train).
