Some people just want the accolade and not a material prize. Others have sudden changes of circumstances that take them off line for a while.

I suggest you leave a note on their talkpage and leave them the option to get in touch if they want to claim their prize. 

If the rules don't already cover this situation it is an idea to specify how long you will keep the prize for if it is unclaimed.

I'm not sure if you and your team have had learnings from organizing the contest in Dutch Caribbean that you would like to share with others. This year, we had Wiki Loves Monuments in the Dutch Caribbean for the first time. In 2013 and 2014 Aruba already competed, but this time we invited people visiting or living in Saba, Sint Eustatius, Sint Maarten, Curacao, Bonaire and Aruba to take pictures and win a prize!
