Mix'n'match and the Wikidata game use PHP as a scripting language, Histropedia uses ASP.NET. The other I don't know. The MediaWiki software powering Wikipedia and Wikidata is also written in PHP. But only PHP (or any other server side scripting language) isn't enough. You also need to have knowledge of javascript, jQuery, css, HTML, XML, json. I don't know if frameworks are used and if so which. And always important in programming is knowledge of OO programming (object orientated programming).
