You can use Wikipulse (https://wikipulse.herokuapp.com/) which shows the rate of edits for the current minute. Given that most edits on Wikidata are from bots, you can estimate that the number for each minute is about the same. (Not sure how precise you need).
If you need an exact number, you can connect to the real-time feed on irc://irc.wikimedia.org/#wikidata.wikipedia.
