is there a plan which Node versions will be used in the WMF production data centers in the following years:

In particular, I for my research projects I would like to develop only for one particular node version to reduce the maintanence effort, i.e., with regard to security patches.

Yes, there is a plan :) There is currently an on-going effort to move the services to Kubernetes. Once we start moving them, we also plan on switching them individually to the current Node LTS ver 8.x, so you may assume that Node 8 will be default and required platform for services in the WMF production environment.
