Presumably the Wikipedia Android app license [5] lets F-droid compile a version of the Android app with the tracking code disabled or removed. IANAL so can't tell from the license whether the resulting work has to be renamed à la Debian Iceweasel [6].

Can someone with an F-droid wiki account or who has a contact in that org update the Wikipedia app page [7]? The Wikipedia Android app license [5] is not GPLv2 but Apache 2.0, and the Site and Issues links are redirects.
