Solved! I contacted my hosting provider. It has something to do with the web
server conifguration (apache): "echo" is a system command and is blocked by
default on mod_security in apache. They disabled it 2-3 days ago. It's
running just fine now. Thanks to all of you an specially those sitting in
#mediawiki who guided me to the right way.

Any help available?
Check server error log. Check server's configuration for "mod_security"
or similar "security" or "application firewall" modules that might
be
misconfigured.

FWIIW, I can create an article named "cohecho" just fine. No 500s on
visiting or changing the article either. I deleted the page and tried
again with language set to Spanish, and again, no issues.
Do keep us posted on what you find, because this is indeed bizarre.
