It would be easier if we could use an existing theme from jQuery UI and alter the CSS for look and feel.

Actually the custom jQuery UI skin we use is called Vector (to match the MediaWiki skin), but it's somewhat similar to the existing jQuery UI skin Cupertino. Any styling that we can reuse from existing jQuery UI skins would make life easier (rather than building all new CSS from scratch). You can test out the existing button themes at http://jqueryui.com/demos/button/ .

This gets into the skins discussion, whether the new aesthetic will influence Vector and Monobook or a whole new skin only. Brandon, I think we need you to drive this conversation so we are thinking implementation around UI elements correctly.
