I think offering a link to the history of the page is better. The last editor is not that relevant (and quite often it will be a bot), but the history gives you a quick glance to the fact that this page has been updated by several people at different points of time for reasons summarized in the description of each edit. From there you can click to user profile pages if you wish.

The history monile page is ok already today. It would benefit from a summary at the top that could provide interesting information to newcomers and regular editors alike, i.e.

This page was created on DD-MM-YYYY and has been edited N times by N registered volunteers and N anonymous users.
