Since media aren't dump i think I can't consider a mediawiki install however, mysql error does not occured because of an utf-8 encoding, the database is utf-8 by default. the error append from importing the FR dump via MWDumper in a text field containing a "\n" in the text field.

Our company is creating a partnerchip with the wikipedia fondation and we can not use kiwix which is not comming from this fondation.

I will reconsider my project using the static dumps

The method you chose is unlikely to be the best one for your goal. Use static HTML+images dumps instead and serve pages from there, that's what Kiwix (kiwix-serve) is for.
